Crock Pot Pulled Pork

Ingredients

  • 4 to 4-12 lbs. pork roast (butt or shoulder)
  • 2 large onions
  • 1 cup ginger ale
  • salt and pepper to taste
  • 1 - 18 oz. barbecue sauce

Preparation

  1. Slice one (1) onion and place in the bottom of the crock pot.
  2. Place the pork roast on top of onions. Slice the second (2) onion on top of the roast. Salt and pepper to taste.
  3. Pour the ginger ale over roast and onions. Cover and cook on LOW until well cooked and the pork shreds easily, 9 to 10 hours. Note: The length of time may vary according to individual slow cookers. TIP: You may want to turn the roast over after 5 hours of cooking, so it cooks evenly.
  4. Remove the meat and strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin.
  5. Return the shredded meat and the onions to the crock pot, stir in the BBQ sauce. Continue to cook on LOW for 2 to 4 hours.
  6. ENJOY!
